As a JET looking to start in Japan longer, but looking to go into another field of work, where does one start to look?

Having sub 2級 Japanese at the moment (but studying hard!) what are the prospects of successfully getting work in Japan in a career besides teaching English?

It depends on your Japanese ability.

Outside of teaching English, without (at the very least) level 2 Japanese, there aren't many jobs for foreigners available in Japan. Even nowadays most reputable companies are looking for level 1 more than anything -- unfortunately somewhate devaluing the level 2 certification.
     
One job that I've heard of people not fluent in Japanese doing after their JET tenure is a 'overseas recruiting' job in Tokyo/Osaka. Although it sounds pretty high profile, I've also heard stories that it's basically hardcore cold-calling with quotas that are difficult to meet even for the best.
     
Naturally though, if you continue to study hard and get your Japanese to level 2 or higher, the job-doors open according to your education and experience.
